I recently found myself in a hotel with my husband and two kids for 10 days- My husband had an extended work trip that we decided to turn into a mini-family vacation in the heat of summer. Trying to live simply, as toxin-free, and frugally-as-possible while on vacation, I found myself racking my brain for dinner ideas I could make that would feed the family with only a few grocery items, but that could also be cooked with only 1 pot, 1 pan, and minimal cookewear on a small hotel stove. Below is a list of what we cooked and ate for the 10 dinners of our hotel stay.
For most of the items below, I generally boiled or steamed a simple veggie and threw in some fruit on the side to complete.
So, without further ado, here’s the list I came up with !
- Tacos. Tried and True.
- (GF) Spaghetti with Meat Sauce
- Sloppy Joes (Bunless)
- Bean & Spinach (Corn) Quesadilla’s
- Mushroom & Pea Risotto
- Veggie Omelette (because what kid doesn’t love breakfast for dinner)
- Burger with Sweet Potato
- Pan-Seared Chicken with Corn on the Cob
- Stir Fried Rice (with Tofu, chicken or egg)
- Grilled Ham and Cheese
